Why do we need to sign up to different exchanges? Are there certain advantages?

Newbie here, I’ve been reading for awhile now about cryptocurrency and trading. And I just have some clarification really, aside from buying coins that are only available to specific exchanges. Why do we need to sign up to other exchanges? Are there any advantages on signing up to different exchanges?
