Are there any exchanges that offer altcoin buy/sell orders that adjust dynamically based on fiat price? (without using USDT)

Example: I want to buy VTC at $1.00, but VTC is only traded in BTC-VTC pair. I can't put in a buy order and forget it because the price of BTC may shift causing me to over pay.

Lately I've been using GDAX and love being able to set orders deep in the money with fiat-BTC/Eth pairs. Wishing there was some way I could do the same with other cryptos without keeping a bunch of money stashed in Tether.
